White Chicken Chili

1 Medium onion, chopped
1 Jalapeno pepper, diced fine
1 Tbsp. canola oil
2 Cloves garlic, minced
1 Tsp. Salt
½ Tsp. Pepper
1 lb boneless chicken breasts, cubed into small pieces
32oz chicken broth
4oz chopped green chilies
2 Tsp. cumin, round
1 Tsp. chili powder
1 Tsp. dried oregano
3 14oz cans white beans, any type you like, drained

HEAT OIL IN A 6 QT STOCKPOT. ADD ONION AND JALAPEÑO. SAUTÉ UNTIL SOFTENED. ADD GARLIC, SALT, PEPPER AND SAUTÉ 45 SECONDS. ADD CHICKEN, BROTH, CHILIES, CUMIN, CHILI POWDER AND OREGANO. SIMMER 30 MINUTES UNTIL CHICKEN OS COOKED THROUGH. ADD BEANS AND HEAT FOR 15 MINUTES. SERVE. CAN TOP WITH CHEESE IF DESIRED.
