PUMPKIN AND TOMATO BISQUE

2 TBSP. BUTTER

2 TBSP. VEGETABLE OIL

1 LARGE ONION, CHOPPED

4 C. CHICKEN STOCK

28 OZ. WHOLE TOMATOES

1 TBSP. HONEY

4 C. PUMPKIN PUREE (NOT PUMPKIN PIE FILLING!)

1 TBSP. SALT

½ TSP PEPPER

 

MELT BUTTER IN A LARGE STOCKPOT AND THEN ADD OIL.  ADD THE ONION AND SAUTÉ UNTIL THE ONION IS SOFTENED.  ADD SALT, PEPPER AND CHICKEN STOCK.  PUREE TOMATOES IN A BLENDER UNTIL SMOOTH.  ADD TOMATOES, PUMPKIN AND HONEY TO STOCKPOT.  SIMMER ON LOW FOR ABOUT 30 MINUTES.  YOU CAN PUREE SOUP FOR A SMOOTHER TEXTURE IF DESIRED BEFORE SERVING. SERVE WITH CROUTONS IF DESIRED.
