2 cans beef broth 1 can chicken broth 1 qt. canned tomatoes Salt & pepper to taste 2 cans rinsed kidney beans 1 can garbanzo beans, rinsed 1 c. celery, sliced 1 c. carrots, sliced thin
1 lg. onion, diced 2 cloves garlic, minced 1 bag frozen Italian vegetables 1 T. basil, dry 1 T. rosemary, crushed ‘A c. flat leaf parsley, minced 1 box frozen spinach, thawed 1 c. ditalini pasta
Sauté onion, celery, carrots and garlic in olive oil for 2-3 minutes. Add rest of ingredients except spinach and pasta; simmer for 20 minutes. Add pasta and spinach; simmer until pasta is done. Garnish with fresh grated Parmesan cheese if desired.
