1 c. Italian seasoned breadcrumbs 1/2 c. olives of choice, chopped fine 2 cloves garlic, minced 2 T. grated onion 2 eggs, lightly beaten 2 T. lemon zest
1 tsp. salt 1 tsp. pepper 1 lb. ground sirloin 1 lb. ground pork 8-oz. block mozzarella cheese, cut into sm. cubes
Mix all of the above ingredients together (except mozzarella cheese). Form into 1’/2-inch balls, flatten slightly and place a cube of cheese into center of each ball then enclose cheese into the middle of each meatball. Place meatballs onto a baking sheet and bake at 400° for about 20-25 minutes. While meatballs are cooking, make sauce.
