c. vegetable oil 1 tsp. poultry seasoning or sage 8 thin center cut pork chops 2 lg. eggs Salt & pepper to taste 2 c. panko bread crumbs c. all-purpose flour In a shallow bowl, beat eggs lightly. Place flour in another shallow bowl or plate. In a third plate, place panko and stir in poultry seasoning. Heat oil in a large skillet. Salt and pepper each side of the pork chops. Coat each chop in the flour first, egg mixture second and finally in the panko bread crumb mixture. When oil is hot, fry the chops until golden brown and cooked through. This takes about 3 minutes per side. Drain and serve. Serves 4 (2 chops per person).
