4 boneless, skinless chicken breasts, cut into bite-sized pieces 1/2 (12-oz.) bag bacon, chopped (6 oz.) 1/4 tsp. salt
1/4 tsp. fresh ground black pepper 1/4 tsp. apple pie spice c. apple butter 3 T. apple cider vinegar 6 T. olive oil
Salt and pepper chicken. In a small bowl, combine apple pie spice, apple butter, vinegar and 1 tablespoon oil. Set aside about 1/4 apple mixture. In a large skillet, brown bacon and remove cooked bacon with a slotted spoon. Add remaining oil to drippings and add chicken. Cook for about 10 minutes or until almost cooked through. Add apple butter mixture and finish cooking until the juices of the chicken run clear. Add cooked bacon pieces and serve. Serve with Glazed Apples.
Glazed Apples: 3 lg. McIntosh apples, cut into 2 T. butter slices Rest of apple butter sauce
Melt butter in a large skillet; add apples. Sauté for 2-3 minutes until apples are tender. Brush with apple butter mixture to glaze as you are cooking. Serve with chicken.
